1. mysql_secure_installation
「MySQL 5.7」からインストール後に、スクリプトを実行して初期化します。
初期化時にパスワード等を設定するのが正式な設定方法です。
「root」ユーザ権限で。
mysql_secure_installation
以降、プロンプトに従って入力して進めていきます。

LOW Length >= 8
MEDIUM Length >= 8, numeric, mixed case, and special characters
STRONG Length >= 8, numeric, mixed case, special characters and dictionary file

By default, a MySQL installation has an anonymous user,
allowing anyone to log into MySQL without having to have
a user account created for them. This is intended only for
testing, and to make the installation go a bit smoother.
You should remove them before moving into a production
environment.

「anonymous users」を削除しますかってんで y Enter
Success.
Normally, root should only be allowed to connect from
'localhost'. This ensures that someone cannot guess at
the root password from the network.
Disallow root login remotely? (Press y|Y for Yes, any other key for No) :
「root」ユーザのリモートログインを禁止しますかってんで y Enter
Success.
By default, MySQL comes with a database named 'test' that
anyone can access. This is also intended only for testing,
and should be removed before moving into a production
environment.

テストデーターベースを削除しますかってんで y Enter

これで、基本的な設定は、終わりです。
いったん、サーバを再起動します。
service mysql-server restart
2. root パスワードの設定
「root」のパスワードを変更した場合は、ログインして再度パスワードの設定を行います。
そうしないと、
$ mysql -u root -p

てな感じで怒られちゃうのです。
たまたま、「SHOW VARIABLES LIKE ...」てな感じですが、これは、たまたまで、ほぼどんな「SQL」でも受け付けてくれない。
不思議に「SET」は、受け付けられるので・・・。
そのまま続けて、パスワードを設定します。
わたしの場合、パスワードを最小４文字で、低めのポリシーにしますので、あらかじめ、そういう設定を行ってから、パスワードを設定します。

その後、おもむろに、先ほど受け付けてくれなかった、SQL を発行すると
